Ingredients

Instructions
1. Thaw the lobster tails if frozen by refrigerating overnight or submerging in cold water for 30-60 minutes.
2. Rinse the thawed lobster tails under cold water and pat dry with paper towels.
3. Using kitchen shears, carefully cut down the middle of the top of the shell, stopping at the base of the tail.
4. Separate the meat from the shell, keeping the base attached, and lift the meat to place it on top of the shell.
5. Remove the dark intestinal vein, if visible, from the lobster meat.
6. Brush the exposed lobster meat with a mixture of lemon juice, olive oil, salt, and pepper to keep the meat moist and flavorful during cooking.
7. Melt 4 tablespoons of unsalted butter in a small saucepan over low heat without browning the butter.
