🍝 This One Pot Creamy Pesto Chicken Pasta is the perfect quick meal for busy nights! Enjoy a rich and satisfying dinner in just 25 minutes with minimal cleanup.
πŸ₯˜ A delightful blend of creamy pesto sauce, tender chicken, and penne pasta makes this a meal the whole family will love!

Ingredients

Scale

1 lb boneless, skinless chicken breast, cut into 1-inch pieces
2 tablespoons butter or olive oil
2 cloves garlic, minced
8 oz penne pasta (preferably with ridges)
1.5 cups chicken broth
1 cup milk or 3/4 cup single/light cream
3 oz cream cheese
1/3 cup basil pesto (homemade or quality store-bought)
1/4 cup grated Parmesan cheese
Salt and freshly cracked black pepper, to taste
Pinch of crushed red pepper flakes
Optional: 3 cups fresh spinach
Optional: 1/4 cup sliced sun-dried tomatoes
Optional: Lemon juice and zest
Optional: Fresh basil leaves

Instructions

1. Season the chicken with salt and black pepper. In a deep skillet, melt butter over medium heat or heat olive oil and brown the chicken pieces. Add minced garlic and sautΓ© for an additional minute.
2. Stir in uncooked penne pasta and chicken broth, scraping up browned bits from the bottom. Cover and bring to a boil over medium-high heat, then reduce to medium-low and simmer for about 8 minutes, stirring every 2 minutes, until pasta is tender and most of the broth is absorbed.
3. Add milk or cream, cream cheese, and pesto, stirring and cooking until the cream cheese melts and the sauce is creamy. Stir in Parmesan cheese and adjust seasoning as needed.
4. If using, add fresh spinach and sun-dried tomatoes, cooking until the spinach wilts.
5. Finish with a sprinkle of freshly cracked black pepper, red pepper flakes, lemon zest, and fresh basil leaves before serving.

Notes

πŸ… Use penne pasta with ridges to better hold the creamy sauce.
πŸ§€ Stir vigorously when combining pasta with the sauce to release starch that helps thicken it.
🌿 Reserve pasta cooking water to adjust sauce consistency if needed.
