6 cups low-sodium or no-salt chicken broth
1 cup milk (whole milk, 2% milk, or half & half)
2 stalks celery, chopped
2 medium carrots, sliced
1 (1-oz) package dry ranch dressing mix
12 slices of thick-cut bacon, cooked and crumbled
1 1/2 cups shredded cheddar cheese
3/4 cup cream cheese, softened (optional)
8 oz dried fine egg noodles or thin pasta


Instructions

1. Cook the bacon until crispy using a skillet, oven, or microwave, then crumble it into bite-sized pieces and set aside.
2. In a large stockpot or Dutch oven, heat a tablespoon of oil over medium heat.
3. Add the chopped celery and sliced carrots to the pot and sautΓ© for 5-7 minutes until they begin to soften.
4. Add the cooked or shredded chicken into the pot.
5. Pour in the can of condensed cheese soup (or condensed chicken soup) along with the chicken broth and milk.
6. Stir in the package of dry ranch dressing mix to combine all the flavors.
7. Add the crumbled bacon to the pot, reserving some for garnishing if desired.
8. Increase the heat to medium-high and bring the soup mixture to a boil.
9. Once boiling, reduce the heat to low and let the soup simmer for 20-25 minutes, allowing the flavors to meld.
10. Add the dry fine egg noodles to the soup and stir them in.
11. Stir in the shredded cheddar cheese to melt into the soup.
12. If using, add the softened cream cheese to make the soup extra creamy.
13. Cook the soup for an additional 6-8 minutes or until the noodles are tender.
14. Taste the soup and adjust consistency if needed by thinning it with chicken broth or milk or letting it simmer longer for a thicker result.
