½ cup (115g) unsalted butter, room temperature
½ cup (100g) dark brown sugar, packed
¼ cup (60mL) unsulphured molasses
1 teaspoon pure vanilla extract
Optional: 1 large egg
½ cup (65g) powdered sugar
½ tablespoon heavy cream or milk
Alternative royal icing option:
2 cups powdered sugar
1 ½ tablespoons meringue powder
46 tablespoons water


Instructions

1. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, ginger, allspice (or nutmeg), cloves, and salt.
2. In a large bowl, cream butter and brown sugar until light and fluffy.
3. Add molasses and vanilla; mix until combined. If using, add egg and mix until smooth.
4. Fold dry ingredients into wet ingredients until streak-free. If sticky, refrigerate for 15–20 minutes.
5. Shape dough into gingerbread men: use 1 tablespoon for the body, 1 teaspoon for the head, and smaller for arms and legs. Assemble on parchment-lined baking sheets, leaving space between.
6. Freeze shaped dough for 10–15 minutes.
7. Preheat oven to 350°F (175°C). Bake for 13–17 minutes until puffed and slightly browned. Cool on baking sheet for 10 minutes, then transfer to a wire rack.
8. For icing, mix powdered sugar with cream or milk to desired consistency; adjust as needed. For royal icing, whisk powdered sugar, meringue powder, and water until fluffy.
9. Decorate cooled cookies and allow icing to set before serving or storing.
