Instructions

1. Gather and prepare all ingredients, including flank steak or top sirloin, onions, and ingredients for the marinade and sauce.

2. Slice the beef thinly against the grain to ensure tenderness.

3. Prepare the marinade by mixing soy sauce, oyster sauce, sesame oil, Shaoxing wine or rice vinegar, a pinch of sugar, and baking soda in a bowl. Marinate the beef for 15-30 minutes.

4. While the beef marinates, prepare the sauce by combining light soy sauce, dark soy sauce, oyster sauce, ketchup, sugar, and water in a small bowl. Stir until the sugar dissolves.
