Ingredients
6 bone-in, skin-on chicken thighs
Kosher salt and black pepper
2 tablespoons extra virgin olive oil
1 small yellow onion, chopped
2 celery ribs, chopped
1/2 red bell pepper, chopped
1/2 green bell pepper, chopped
8 ounces mushrooms (white or baby bella), cleaned and sliced
3 garlic cloves, minced
1 teaspoon dried oregano
3 sprigs fresh thyme
2 tablespoons fresh chopped parsley, plus more for garnish
Pinch of red pepper flakes (optional)
1 cup dry red wine or chicken stock for a non-alcoholic version
28-ounce can crushed tomatoes
Instructions
1. Pat chicken dry and season with salt and pepper on both sides.
2. Heat olive oil in a large pan over medium-high heat, and brown the chicken, skin side down first, until golden. Remove and set aside.
3. In the same pan, sautΓ© onions, celery, bell peppers, mushrooms, and garlic. Season with salt, pepper, oregano, thyme, parsley, and red pepper flakes. Cook until tender.
4. Add red wine, reduce by half, then stir in crushed tomatoes. Cook for 5-10 minutes.
5. Return chicken to the pan, nestling it into the sauce. Cover and simmer on medium-low for about 30 minutes, or until chicken is tender.
6. Garnish with fresh parsley before serving.
