2 teaspoons fresh lemon juice
1 teaspoon vanilla extract
3 large eggs, at room temperature


Instructions

1. Preheat the oven to 350°F (175°C). Lightly spray an 8×8-inch baking pan with nonstick spray and line with parchment paper, leaving a 2-inch overhang on two sides.
2. In a large bowl, combine graham cracker crumbs and brown sugar. Stir in melted butter until the mixture holds together. Press into the pan’s bottom. Bake for 10-12 minutes until golden brown. Cool completely.
3. Lower the oven temperature to 325°F (163°C). Beat the cream cheese until smooth. Gradually add sugar and continue mixing until creamy.
4. Mix in sour cream, lemon juice, and vanilla. Add eggs one at a time, mixing minimally between each.
5. Pour the filling over the cooled crust. Bake for 30-35 minutes until the edges puff and the center is slightly wobbly.
6. Cool on a wire rack for 2 hours, then refrigerate for at least 4 hours or overnight.
7. Lift bars using parchment and slice with a sharp knife, wiping clean between cuts.
