2 large eggs, at room temperature
2 teaspoons vanilla extract
2 cups (about 240 g) finely grated fresh carrots


Instructions

1. Preheat oven to 350°F (175°C). Line muffin tin with paper liners or grease it well.
2. In a medium bowl, whisk flour, sugar, cinnamon, baking soda, baking powder, and salt.
3. In a large bowl, mix oil, brown sugar, eggs, and vanilla until smooth.
4. Stir in grated carrots and any optional add-ins like nuts or raisins.
5. Combine dry ingredients into the wet mixture until just incorporated.
6. Fill muffin liners two-thirds full.
7. Bake for 20 to 22 minutes, or until a toothpick comes out clean.
