Instructions

1. Cut chuck roast or stewing beef into 1-inch cubes.
2. Season beef with salt, pepper, and garlic powder.
3. Sear beef in batches in a hot pan to avoid overcrowding.
4. Transfer browned beef to the slow cooker.
5. Cut potatoes, carrots, celery, and onions into large chunks.
6. Add vegetables to the slow cooker.
7. Pour in beef broth as the base liquid.
8. Add optional red wine for extra flavor.
9. Stir in tomato paste for richness.
10. Season with Worcestershire sauce, thyme, rosemary, and bay leaves.
11. Cover and cook on low for 7-8 hours or high for 3-4 hours until beef is tender.
12. In the last 15-30 minutes, add frozen peas.
13. If desired, thicken the stew at the end with a cornstarch slurry.
14. Remove bay leaves before serving.
15. Serve hot with crusty bread for dipping.

Notes

Brown the beef before adding it to the slow cooker to create a deeper, richer flavor in your stew.

Cut vegetables into large chunks to prevent them from becoming too soft during the long cooking process.

Add a cornstarch slurry at the end of cooking if you want a thicker broth for your stew.
