Scale

2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon ground allspice
1 cup vegetable oil (or avocado/canola oil)
1 cup granulated sugar
1/2 cup packed light or dark brown sugar
1 cup unsweetened applesauce
4 large eggs, at room temperature
1 teaspoon pure vanilla extract
2 tablespoons orange juice (or substitute with apple juice or cider)
3 cups peeled and chopped apples (1/2-inch chunks, about 2 to 3 large apples)
Optional Cinnamon Topping:
1/4 cup granulated sugar
1 teaspoon ground cinnamon
1 tablespoon unsalted butter, melted
Optional Brown Sugar Glaze:
1/4 cup unsalted butter
1 cup packed light or dark brown sugar
1/2 cup heavy cream
Small pinch of salt
1/2 cup confectioner’s sugar, sifted

Instructions

1. Preheat oven to 350°F (175°C) and grease a 9×13-inch cake pan.
2. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and allspice.
3. In another bowl, whisk oil, granulated sugar, brown sugar, applesauce, eggs, vanilla, and orange juice until well combined.
4. Gently combine the wet and dry ingredients, then fold in the chopped apples.
5. Pour the batter into the prepared pan and spread evenly. If using, sprinkle the cinnamon topping over the batter.
6. Bake for 45 to 50 minutes; tent loosely with foil after 30 minutes. Check for doneness with a toothpick.
7. Cool the cake on a wire rack.
8. For the glaze, melt butter with brown sugar, cream, and salt; boil for 1 minute. Whisk in confectioner’s sugar, cool slightly, then drizzle over the cake.

Notes

🍎 Use baking apples like Granny Smith and Honeycrisp to retain texture during baking.
🔪 Mix by hand to avoid overworking the batter, ensuring a tender cake.
❄️ Store at room temperature for up to 2 days or refrigerate for 5 days; unglazed can be frozen for longer storage.
