Ingredients
Baby Arugula (4 cups)
Apples (2, choose Pink Lady or Honeycrisp)
Pecans (1/2 cup, toasted or candied)
Goat Cheese (1/4 cup, crumbled)
Red Onion (1/4 cup, sliced)
Figs (1/4 cup, sliced)
For Dressing:
Olive Oil (3 tbsp)
Lemon Juice (2 tbsp)
Maple Syrup (1 tbsp)
Dijon Mustard (1 tsp)
Salt and Pepper (to taste)
Instructions
1. Wash the arugula thoroughly using a salad spinner to remove excess moisture.
2. Slice the apples into thin, even pieces to ensure they blend well with the other ingredients. Slice the red onion thinly.
3. If using figs, quarter them carefully.
